I have had an early settlement offer accepted and been told over the phone that I have 30 days to pay. What happens next? Shouldn't I expect something in writing outlining this (or what should I ask for??)

The IP will go through the normal closure process and, in due course, you will get a certificate of completion.
My opinions are merely that .. opinions based on experience. Always seek professional advice.
IVA Completed 23rd July 2013 .... C.C. 10th January 2014

Once you have paid the amount across then a completion letter should follow shortly.

Hi Andrew,

When our f&f was accepted, they initially confirmed verbally, and then sent an email and a letter out to me to outline the 30 days to pay, as well as bank transfer details for sending payment over.

Once I had received this, we paid the funds, I called to check receipt of these- which can take up to 48 hrs to reach them- and they confirmed receipt verbally, via an email and a letter as well.

Got our certificate of completion the end of that month.

We had a large some paid over and we were so concerned that something could go wrong, but I just kept calling and checking every step of the way :)
Started IVA 27th Feb 2012 - Due to complete 27th Jan 2018 !!

Full & Final submitted and accepted 30th March 2015, paid 10th April 2015 - 3 yrs 1 month into IVA :)

Completion Certificate received- 30th April 2015!!

Peraonally I would wait until you have all details in writing. you wouldnt want to pay money in only to aubsequently find out they treat it as a windfall amount due to some admin screw up, you want it in black and white that upon receipt of said funds IVA is satisfied.... call me paranoid ! I would then send payment with letter that confirms payment of £xxxx is in full and final settlement of IVA ref number bla bla bla only.

My Blog details, the route I took before IVA, how I choose my firm, equity release advice (year 4-5), challenging the CRA's keeping IVA on credit file once gone from insolvency register

IVA ended August 2015. Would recommend McCambridge Duffy

Ask for it in writing then pay ..once all received they will action the closure process and it will all go through.
