I had an overdraft of £500 with HSBC in my name only after a number of years we decided to make this account Joint, recently I entered into an IVA which included said overdraft, is my wife liable for this debt even though it was originally mine.

If the account was in overdraft, or the facility existed, when your wife was joined in, it became her debt too --- so she is now responsible for it.

Don't be surprised if HSBC send notification to close your account. They are known for closing accounts on people with iva's. We got given 14 days notice when in our iva and had to quickly revert to a basic bank account.
