I want to use a post office account to save some cash that doesn't go into a bank account.
Can i?

I see no reason why not, as long as you are only saving money from your allocated allowances and shares of overtime, bonus payments etc.

The post office are now looking to close down accounts so I would look towards an account such as the Co-op

Some firms try and grab savings but we actively encourage it. There is no harm in having a savings account if the bank is happy.
