I will soon be changing jobs at the end of my maternity leave and will be entitled to 10 days holiday pay (well I will be if my boss stops being an a**se and refusing to pay it).
Will this be classed as extra earnings as it is in lieu of holiday and how much will I beexpected to pay into my iva?

Probably worth checking with your IP where you stand on this one,as it may be dealt with differently by different Ip companies.
