If you are after saving a few pennies in the run up to Christmas without spending too much on your food shopping - buy a chicken for Sunday lunch, use a couple of slices (OD on the tatties) then when is cooled down enough dismantle the rest of the chicken and get everylittle bit of chicken off the bone then on Monday night you can make chicken pie (campbells chicken soup (3 for £1 in Somerfield at the mo) mix the soup with the chicken and any veg you fancy and depending on no. of people this can last for one night or 3!!! And if you've still got some leftover you can turn it into a chicken pasta bake or curry of sweet and sour chicken!! And if you are feeling particularly resourceful then boil up the bones to make stock for soup!!!

Got to tell you. My 2 yr old grandaughter came the other day. i was just putting a chicken in the oven. Grandad in his wisdom says to her ooh look a chicken and starts clucking round the kitchen. She looked horrified into the oven as if she was going to see it running about, but for some reason then thought it looked more like a frog so that was it . Every time she went past the oven she peered in looking very confused ahhh. We love her.
Great idea by the way.

Great idea Louisa. My Dad was very resourceful with the christmas turkey! We had turkey Christmas Day and re-heats on Boxing Day (not the turkey before anyone cries salmonella!). Turkey was again on the menu on the 27th as a curry, and used as a chinese meat-mix (with chicken) on the 28th. Good job we all like turkey!!

A cheap and tasty way to cook a chicken is in a slow cooker ( needs to be one of the bigger model slow cookers like the MR 6.5Litre £20 Amazon) Cooked on low it uses the same amount of power as a 100 watt light bulb and the meat just falls off the bone! In my MR 6.5 there is room for 4 baked potatoes at the same time (wrapped in silver foil and placed next to the chicken). Set it away in the morning, go to work and come back to tasty cooked chicken smells and a ready meal!

4 down 56 to go
My thanks to Melanie and her team :)
