As the big day approaches I thought I'd share some of my favourite recipes with you all. the firs is for a delicious home made ginger biscuits. I should warn you that this recipe is good for about 100 biccies[:D]

Ingredients

250g unsalted butter or margarine, softened
1 1/4 cup granulated sugar
1 egg
2 tbsp dark corn syrup
1 1/2 tbsp grated orange zest
1 tbsp water
3 1/4 cup all-purpose flour
2 tsp baking soda
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp salt

ICING

1 egg white
1 tsp almond extract
2 - 4 cups confectioners' sugar

Directions

Preparation time: 30 minutes Chilling time: Overnight Cooking time:10 minutes

1. Cream butter and sugar in large mixer bowl with electric mixer. Beat in egg until light. Stir in corn syrup, orange rind and water. Mix flour, baking soda, cinnamon, ginger, cloves and salt. Stir into
butter mixture to form a dough. Divide dough in half. Wrap in grease proof paper and refrigerate overnight.

2. Heat oven to 160 degrees. Have lightly greased baking sheets ready.

3. Roll out one piece of dough at a time on a lightly floured surface or between sheets of floured grease proof paper to 1/8 -inch thickness. Cut into shapes with cookie cutters. Place on baking sheets, leaving 2 inches between each cookie. Bake until golden, 8 to
10 minutes. Transfer to wire racks to cool.

4. For icing, mix egg white and almond extract in small bowl until frothy. Stir in confectioners' sugar until mixture is a drizzling consistency. Drizzle over cookies. Let stand until icing sets. Store
covered.


Servings: 96 servings

I love ginger biscuits, aren't they supposed to be good for you?![:p] Thanks Ray, will try them when I work out how to bake! X

I used to eat ginger bikkies when I was car sick. Then it became an excuse to eat ginger bikkies every time I got in the car!

Mmmm!!! Ray.., they sound yummy[:p].... I thought that too Viki so just had a quick Google and it says that Ginger is good for Travel Sickness,Indigestion,Catarrh,Throat Infections and is also a good Aphrodisiac,the list just goes on and on[:0]...

Ray[:D].....That made me laugh,saying it makes 100 biccies at the top of the page and at the bottom it reads 96 servings... Are the other 4 for the Cook?[;)]

Ray, you'll have to find a recipe for Mulled Wine!! to go with biccies

Hi Angela ... when I drank this was my fave Chrissie treat ...


Ingredients

1 bottle full bodied red wine
1 cup rum or brandy
2 cups water
1 vanilla bean, cut lengthwise in half
10 cardamom pods
5 cloves
1 cinnamon stick
2 teaspoons whole allspice
2 teaspoons orange zest (Or use a whole orange cut in 1/2)
1 teaspoon lemon zest, grated use the whole lemon cut in 1/2
sugar, to taste

Garnish

almonds, blanched
raisins
cranberries

Directions

1) Bring the wine, port, water, vanilla, cardamom, cloves, cinnamon, allspice, orange peel or whole orange cut in half, lemon peel or whole lemon cut in half, hibiscus flowers and sugar to a simmer in a saucepan.

2) Or place in a slow cooker on low for 1-2 hours.

3) Simmer the mixture slowly for 15 minutes.

4) Strain and place into Heat resistant punch bowl or keep in crock pot and keep on low.

5) Place 1 blanched almond and several raisins or fresh cranberries in the bottom of each punch glass.

6) Pour the warm wine mixture over and serve.

I think that's about it ... Oh no .. last instruction ... drink sitting down [:D]

Mulled wine - yum! It's the only way I'll drink red wine. Ginger biccies - no. No a big fan of ginger.

I'm more of a shortbread person myself. Asda do some gorgeous ones spiced with cinnamon - very moreish!

How do you convert the American cups into grams or ounces?

I don't ... if it says cup I use a tea cup ... if it says ounces/grams I guess [:D]... but if ya gotta have it .. here is one worth printing out
