I am in a job I earn Gratuities. If I pay my extra income into my IVA will this allow me to clear my debt earlier?

No -- extra payments increase the dividend to the creditors. Your IVA will run it's full course.
Are the Gratuities simply cash in hand and not documented (or from a tronc)?

OK -- check your own agreed terms, with any luck you have a 10% disregard before having to split what's over 50/50.
